For the Crust:

1 1/3 Polenta Flour
1/4 cup Organic Sugar
1/2 tsp. Kosher Salt
10 tbsp. Bordier Unsalted Butter

For the Filling:

1/2 cup Fromage Blanc
2 (8 oz.) Mascarpone Cheese
1/2 cup Organic Sugar
1 zest of Lemon Amalfi
1 tsp. Vanilla Extract

For the Topping:

1 1/2 lb. Strawberry Gariguette
3 tbsp. Strawberry or Raspberry Jam

Steps:
1. Preheat the oven to 350°. Whisk together the flour, sugar, and salt in a large bowl. Add the melted butter and stir until dough forms. Press the dough into a removable bottom tart pan with a diameter of 10" or 11". Using a fork, prick all over and bake 25-30 minutes until golden. Allow to cool completely.

2. Meanwhile, prepare the filling by beating heavy cream until stiff peaks form using a hand mixer for 7 minutes. Mix together cream cheese and sugar in another large bowl. Then add lemon juice, zest, and vanilla. Combine well. Spread the whipped cream on top of the crust as soon as it has cooled.

3. In a circle, arrange strawberries on top of tart in a circle until the entire tart is covered.

4. In a small microwave-safe bowl, heat preserves and water for 30 seconds. Brush the mixture over the tart and refrigerate until well chilled, about 2 hours.
