There are different versions as to where Blue Shropshire comes from, but what is certain is that this cheese was first produced in the 20th century, but never in the area called Shropshire. The recipe used is that of Stilton, to which is added annatto extract (or annatto) which gives this orange color cheese. Nowadays cheese is produced by 5 of the 6 Stilton manufacturers, including Colston Basset and District Dairy. Colston Basset are the only producers to cast the ladle curd (both for Colston Basset and Shropshire), giving the cheese a creamy texture that the Shropshire Blue produced elsewhere does not have.
