Over the centuries, in the north-east of Italy, an important tradition in the smoking of cheeses and cold meats has developed. Produced from fresh ricotta cheese, smoked in a wood-fired oven. Irregularly shaped artisanal cheese. The rind is very thin and brown, while the paste is white, the texture is compact, velvety and silky. The flavour is sweet, round, full in the mouth with long smoky notes. The aftertaste is intense, long and pleasant, with wood and smoke. Intense aroma and flavour, ideal for first courses. Smoked ricotta can also be grated on gnocchi, soup, pasta and risotto. Established in 1898, the Perinzin dairy is an authentic Italian dairy from the Veneto region. Using quality milk from the Eastern Alps and the Pre-Alps, which is part of the UNESCO World Heritage. The Perinzin family, 5 generations of cheese makers, elaborate their product by hand and with passion, such as maturing on natural wooden boards. Winners of numerous awards for their organic cheese with harmonious and elegant flavors.
