The bees wax on the rind of the cheese retains the moisture of the paste so that its texture remains soft, something unusual for highly matured cheeses like this.
The cheese is straw-yellow in colour and crumbly. It has a few holes and melts in the mouth, although you can feel the tyrosine crystals. Its aroma is pleasant and persistent with roasted notes of beeswax, honey and vanilla. It has a salty and slightly sweet taste.
