The properties of volcanic terrains of its soil, rich in phosphoric acid, potash and magnesia, are such that the pastures are a real raw milk. Licorice, Gentian, Blueberry, fragrant plants mix there and give to this cheese of high tradition a taste of a beautiful subtlety. It is a village situated in 930 m of height in the heart of the mounts of Cantal, that gave him his name.

Cantal is one of rare cheeses which has its place in all the stages of a meal, an aperitif in the cheese board. It also tastes(savors) with some jam of black cherries or still in dice in a salad.
