Preparation
INGREDIENTS for 2 cups:
1) Dark Chocolate 70%: 1 (Tablet)
2) Unsalted Butter : 100g
3) Egg Yolk: 44g
4) Egg Whole: 110g
5) Sugar: 56g
6) Flour T55: 14g
PREPARATION:
1) Melt the butter & chocolate into a bain-marie
2) Whisk and blanch the egg yolk, egg whole & sugar
3) Pour the egg mix into the melted chocolate and add the flour
4) With a pipping bag, fill the chocolate fondant into a ring or container of 12 cm diameter. Portion = 145g by ring
5) Store in the chiller for a few hours before baking or freezing
6) The chocolate fondant needs to defrost before serving
7) Heat in the oven at 190 degrees Celsius for 12 min
