Preparation

Preparation: follow our easy steps to quickly prepare a Thai beef salad for 2.

Recipe Ingredients:

Dressing:

- 1/2 to 1 tsp Thai chilli (finely sliced)

- 2 garlic cloves

- 1 tbsp coriander stems (finely chopped)

- 2 tsp sugar

- 2 tbsp fish sauce

- 3 tbsp lime juice

- 1 tbsp grapeseed oil

Salad:

- 250g beef strips (room temperature)

- 1/2 tbsp canola oil

- 1 tbsp coriander stems (finely chopped)

- 2 cups mixed lettuce leaves

- 2 tsp sugar

- 2 tbsp fish sauce

- 3 tbsp lime juice

- 1 tbsp canola oil

- salt & pepper

- 1/4 cup cherry tomatoes (cut in halves)

- 1/4 small red onions (finely sliced)

- 1/2  large cucumber (cut horizontally into slices)

- 1/4 cup coriander leaves

- 1/4 cup mint leaves

- 1 sprig of spring onion 

Garnish:

- 1 tbsp cashew, roughly chopped

- extra coriander leaves and mint leaves

Cooking steps:

Dressing:

1. Place chillies, garlic, coriander leaves and a pinch of salt into a bowl and press with a mortar, until you obtain a smooth paste.

2. Add all the other dressing ingredients into the bowl and mix gently.

Beef:

1. Preheat a pan over high heat

2. Add a pinch of salt and pepper on the beef, and the canola oil into the pan, cook to your liking (recommended time: 2 min)

3. Once cooked, set the beef aside into aluminium foil for 10 min.

Salad:

1. Place lettuce leaves into a bowl, toss with 1 tbsp dressing

2. Add the beef and the remaining salad ingredients (keep few leaves of coriander and mint aside, for decoration)

3. Serve on plates and sprinkle cashew nuts over the salad.

4. Add few coriander and mint leaves on top of the salad and drizzle with remaining dressing.
