Dover sole is a famous fish in europe, considered as one of the foundation of continental cuisine. This flat fish, sometimes called black dover sole is living on the sandy seabed of the northern Atlantic ocean or Mediterranean sea. With a glistening raw meat that becomes white and dense when cooked, it has a mild and sweet flavour. Dover sole is rich in sodium, good cholesterol and protein, his fillet is quite thin so it's recommended to either poach or steam it rather than grilling, baking of boiling it as the meat can become dry. It's considered excellent cooked on the bone, with roasted vegetables, asparagus and herb sauce.
