Red mullet is mainly found in the Mediterranean sea, north Atlantic ocean and more rarely in the black sea. There are different type of red mullet, all part of the goat fish family. It has a light pinky meat with a delicate flavour. It can be oven cooked, en papillotes, grilled or even marinated with vegetables or pastas. The best period is from May to November, outside of spawing season. The bigger the fish, the better in terms of flavour and lessening environmental impact. A red mullet 300-400g is the perfect size to enjoy the tender meat and better to eat it on the day of purchase. The bones can be kept for delicious stocks, very famous in France used in a mediterranean dish : la bouillabesse.
