Steps:

1. Cut the cheese into slices or by using raclette machine. Use a quarter wheel or half wheel machine. Melt the cheese on a pan or in the machine.

2. The potatoes should be thoroughly rinsed under running water and wiped dry. Drizzle them with some olive oil. Sprinkle them with salt and pepper on all sides.

3. To get crispy potatoes, bake them for 50 to 60 minutes and check their doneness by piercing them with a fork every 20 minutes. A potato is done when the skin is dry and the inside feels completely soft.

4. Bake the potatoes with foil wrapped around them for softer skins.

5. If you want extra-crispy potato skins, brine them. Combine 2 tablespoons kosher salt with 1/2 cup water and stir until dissolved. Dip the potatoes into the brine. Remove and bake on the rack. Drizzle oil over the potatoes during the final 10 minutes of baking.

6. Pour the Raclette over the potato once it is ready.

7. You can enjoy it with some charcuterie and salads.

8. Optionally, you can add some caramelized onions, garlic, broccoli, and many other accompaniments to the side.
