Preparation

Recipe Ingredients:

1.2 kg veal shank, thickly sliced

2 carrots

2 onions

6 small onions

1 stalk of celery

1 sprig of basil

500 g peeled tomatoes in juice

25 cl balsamic

20 cl stock

3 tablespoons olive oil

2 tablespoons flour

1 branch of thyme

salt and pepper

1 clove of garlic

2 tablespoons flat-leaf parsley

1 lemon zest

1 orange zest

Preparation : Follow our easy steps to prepare the osso bucco alla milanese burrata salad for 6 persons.

Step 1: Peel and shred the carrots.

Step 2: Cut the celery into chunks.

Step 3: Peel and chop the onions. Remove the first skin from the small onions

Step 4: Heat the oil in a pan and fry the onions.

Step 5: Add the meat and brown it.

Step 6: Sprinkle with flour and mix.

Step 7: Add the peeled tomatoes with their juice, the thyme and the remaining vegetables.

Step 8: Moisten with balsamic and stock. Season with salt and pepper. Cover and cook for 1 hour on low heat.

Step 9: Prepare the gremolata: chop the parsley, peel and chop the garlic. Mix in a bowl with the citrus zest.

Step 10: Divide the osso-buco between 6 mini-cocottes and sprinkle with basil and gremolata.
