Preparation

INGREDIENTS for 2 cups:

  • Dark Chocolate 70%: 1 (Tablet)
  • Unsalted Butter : 100g
  • Egg Yolk: 44g
  • Egg Whole: 110g
  • Sugar: 56g
  • Flour T55: 14g


PREPARATION:

Melt the butter & chocolate into a bain-marie

Whisk and blanch the egg yolk, egg whole & sugar

Pour the egg mix into the melted chocolate and add the flour

With a pipping bag, fill the chocolate fondant into a ring or container of 12 cm diameter. Portion = 145g by ring

Store in the chiller for a few hours before baking or freezing

The chocolate fondant needs to defrost before serving

Heat in the oven at 190 degrees Celsius for 12 min
