Gnocchetti is a tight-curved pasta with a rippled exterior, historically made by pressing pasta dough onto the bottom of a wicker basket. Not to be confused with the commonly known gnocchi dumpling, gnocchetti is a classic pasta of Sardinia, where it is also called "malloreddus" or "little fat calves" in Sardinian dialect.

Historically, Gnocchetti were tinted with a little local saffron from the island region in the dough to achieve a deeper golden colour, perhaps to add the appearance of egg yolk. The deep ripples in the pasta are a perfect match for rich and flavourful meat sauces, like this one.
