Selles-sur-Cher is an ash-coated cheese made with whole goat's milk. Over many generations it has maintained its original artisan method of production, originates from Sologne in Central France. It is one of the first cheeses to be accepted as an AOC product, in 1975, and a protected designation of origin (AOP) in 1996.
The more it ages, the Selles sur Cher character becomes more pronounced and its nutty flavor is accentuated. At the first bite, it is faintly heavy and elastic, then followed by a softening as it melts in the mouth.
Thin, ashy rind of a powdery gray color; bright white, dense and slightly moist paste when the cheese is still young.
