This cheese is the result of a love story between a former Canadian-born singer and a hermit cheese maker. They create the "Petit fiancé des Pyrénées", a direct reference to their idyll. The Petit Fiance des Pyrenées is a raw milk goat cheese produced on the farm of the Col del Fach.
Slightly smaller than the reblochon, it has a slightly pressed paste. Its saffron-yellow crust is covered with a thin white layer at the end of ripening. Cheese turning and care is carried out every 2 days. The flavor of the Petit Fiance of the Pyrenees is particularly delicate with a creaminess for an exceptional goat linked to the quality of the milk and the richness of the terroir.
