The Coeur de Touraine comes from a village located in the Center region where every Friday at the beginning of the century farmers cheese producers gathered. They sold their products on the market, located under the prestigious market halls of the village. Every year, the first weekend of June is an opportunity to perpetuate the tradition thanks to a great cheese fair. Historically, ash was used as a protective veil for fresh cheeses. It also provides a slight acceleration of the surface refining process.
Can be enjoyed with hazelnuts or with bread at the beginning or end of a meal.
