The Fromagerie is located at the bottom of a deserted valley 8km long in the Pyrenees Ariège, near the Col del Fach. With his Canadian wife and Opera singer, Philippe, the producer, was looking for space when he settled in this "Terre Courage".
He needed this space poetry to be able to combine work and contemplation.
Tomme de Chèvre with Espelette pepper is a cheese made from raw goat's milk, pressed and uncooked. The dough is flexible and elaborated according to traditional methods in the manner of a Morbier.
