The Saint Félicien is a French cheese from Dauphiné. It is a close cousin of another dauphinois cheese, the saint-marcellin. It owes its name to the place on which the cheese shop originated. Invented at the beginning of the 20th century by a Lyonnais creamer to use its unsold milk and cream, the recipe of St Félicien is strongly inspired by that of Saint Marcellin. But this cheese bigger and creamier, has a softer taste
